Bubba's Dish of The Day
Loaded Baked Potato Soup
Ingredients
4 slices bacon
5 tablespoons butter,unsalted
1/3 cup all-purpose flour
3 1/2 cups milk
3 potatoes, peeled and cubed
2 green onions, thinly sliced (optional)
1 cup shredded cheddar cheese
1/2 cup sour cream
Instructions
Cook bacon on cookie sheet in oven until done. Melt butter in large stockpot over medium heat. Whisk in flour until lightly browned. (doesn't take long) Whisk in milk, cook, whisking constantly until slightly thickened, about 1-2 minutes. Stir in potatoes and green onions.
Bring to boil, reduce heat and simmer until potatoes are tender, about 15-20 minutes. Stir in cheese, sour cream.
Ray's comments: This dish was delicious, even better for leftovers and it is a dish to make again.

this does sound easy and delicious -- I plan to try making this on this cold rainy weekend that's coming up. it would be nice and warm on a cold and windy day like we had today!!!
