Bubba's Dish of the Day
Breakfast Cookies
(Peanut Butter Banana Oat Breakfast Cookies)
Ingredients
2 whole ripe bananas, mashed until creamy
1/3 cup of peanut butter, creamy or chunky
2/3 cup of unsweetened applesauce
1/4 cup of vanilla whey protein powder
1 teaspoon of vanilla extract
1 1/2 cup of quick oatmeal, uncooked
1/4 cup of chocolate chips
In a large bowl, mix mashed potatoes and peanut butter until completely combined. Then add the applesauce, vanilla protein powder and vanilla extract. Mix again until completely combined.
Add in the oatmeal to the banana mixture and combine. Add the chocolate chips at this time too.
Let dough rest for ten minutes.
Drop cookie dough by spoonfuls on cookie sheet. Bake cookies until golden brown. Remove from oven and put on cool rack.
Rays reaction to these cookies weren't as much as my reaction. These cookies are flour-less, egg-less, healthy and simply delicious! When your in the mood for something sweet make this and don't feel guilty about eating a cookie. Really, they are amazing, go ahead and try for yourself.

Thanks for the cooking idea on the taco bake , we tried it and loved it . It's going in the book,lol. I tried to make these cookies before and must say it would probably be better without the mashed potatoes,lmbo. I tried to send over a recipe but it was too long to put on here so if you shoot me an email I will send you over some ideas from my kitchen. Miss ya!!

oh Bubba I'm so glad that you baked these cookies -- because I copied it off facebook a long time ago and just never got around to making them -- I can't make them now because I don't have the protein powder - but they are now on my list of things to do. thanks for being so energetic and 'getting things done' lol love you
