Bubba's Dish of The Day
Coconut Beer Shrimp
Ingredients
4 eggs
1 cup of beer (I used Pumpkin Blue Moon)
3 tps creole seasoning (I used a spicy batter)
1 1/4 cups of flour
2 TBPS baking powder
48 large shrimp, peeled, deveined with tails
1 bag coconut, shredded
2 cups of oil
(this makes a lot, we had batter left over may
want to buy more shrimp than what it calls for)
Directions
1. Combine eggs, beer, creole seasoning, flour and baking powder
2. Blend well
3. Dip the shrimp in beer batter and roll in coconut
4. Fry in oil heated to 350 in deep fryer, or deep saucepan
5. The oil should be 1 - 1/2" deep
6. Drop shrimp in 1 at a time and fry until golden brown
7. Remove and drain on paper towel
8. Serve with heated mandarin orange preserves
(I served with garlic mashed potatoes and asparagus)

ReplyDeleteYes, I forgot to add that in. This dish was one of Ray's favorite and told me to keep this recipe. To me it was really good but I think I like sauteed or grilled shrimp better.
