Ray had made a pork roast the prior night in a crock pot with potatoes, onions, mushrooms, and carrots. Well for only two people, its too much so we thought we would bring everyone dinner. I had the inspiration to bake. Which is one of my favorite things to do! Got out one of Paula Deen recipes out to try, Banana Pudding Pie, from scratch. Now if y'all know me you know I love Paula Deen and you know that her recipes are filled with calories (you know all the butter) but we need that every now and then.
Before I started making the recipe, I looked at all the ingredients that goes into making the pie. Made my list and went to Super Bi-Lo. Back to the kitchen to get started on baking my Paula Deen pie. First step was to crush up all the Nabisco cookies and mix with butter and bake in oven at 350 degrees for 10 mins. Man, thought that was easy. I was trying to look further down the recipe to get further ahead. Next I started making the pudding filling. Measured out all the ingredients, now it was time to turn the burner on. Got the crust out of the oven started cooling and started cutting up bananas in smaller pieces and when the filling was complete putting on layer by layer of chopped up bananas filling crushed Nabisco cookies and so forth. As I finished those steps it was time for the meringue layer. Well, as I was looking at the ingredients realized I had ran out of SUGAR!!!! WHAT WAS I GONNNA DO?
Tried calling Ray, BUT NO ANSWER!!!!! He was busy running errands. Then I had the idea to go either go to Fay's house or Romona's up the street. I figured it would take me longer to go to the store and back. And I only need a 1/2 cup of sugar. I got in the car and drove up the street hoping I would see Fay's car in the street so I could make an easy in and out...no cars...now hoping Romona would be home or it was to Super Bi-Lo. Drove in Ramona's drive-way, and yes she was home. She gave me my sugar and I was on my way! Again back home and back in the kitchen on to making my meringue layer for the pie. Finished blending, spread it on-top and in the oven it went for about 10-12 min. After the minutes had passed, I saw my pie and I felt happy that I could bake a pie from scratch with no help from Ray!!! Yay me.
