Stuffed Mushrooms
Ingredients
24 ounces mushrooms
1/3 pound of hot pork sausage
8 ounces cream cheese
1 whole egg yolk
3/4 cup Parmesan cheese (I used shredded mozzarella)
Instructions
1. Wash mushrooms in cold water, the cut stems off and clean inside of mushrooms with a spoon
2. Chop mushroom stems finely and set aside
3. Brown and crumble the sausage, when finished set aside on a plate to cool
4. In a bowl combine cream cheese and egg yolk. Stir cheese in mixture and add cooled sausage mixture with mushroom stems.
5. Smear mixture into the cavity of each mushroom, creating a sizable mound over the top
6. Bake at 350 degrees for 20-25 minutes or until golden brown

Mozzarella Sticks
Ingredients
String Cheese
Bread crumbs (I used Italian)
Mariana sauce
Instructions
1. Chop string cheese in bite size pieces
2. Dip in milk then in bread crumbs
3. Bake at 400 for 5 minutes, flip, then bake for 2 more minutes
4. Serve with warm Mariana sauce
Ray's comments: He never scene mozzarella sticks baked before but said they were very delicious
Jessica's comments: These are very good and I will be making these again for another appetizer dinner
Pumpkin Truffles
Ingredients
1 box of golden Oreo's
1 8 oz block of cream cheese
1/2 cup of pumpkin pie filling
1/2 tbs of cinnamon
1 package of vanilla almond bark
Instructions
1. Crush whole box of ores until completely crushed
2. Mix cream cheese, cinnamon, ores until combined
3. Chill in freezer until dough is firm, then roll into 1 inch balls and put back in freezer until firm
4. Melt half of almond bark at a time and roll each ball into chocolate
5. Place on wax paper and put back into freezer until firm
Ray's comments: I didn't expect them to taste like pumpkin but they were sweet like fudge
Jessica's comments: Again, I out did myself, these are simply amazing
